Earlier this week, I was on the search for a new healthy meal I could whip up easily. This BBQ Vegetarian Rice Bowl is super easy and is easily adapted to whatever you have in your fridge! I was inspired by a local restaurant in town called Freshii to add BBQ sauce to the mix – it really adds an extra oomph to the dish!
You will need:
- Cooked brown rice
- Cherry tomatoes, halved
- Shredded cheddar cheese
- Canned black beans, rinsed and drained
- Frozen corn, boiled
- Sliced avocado
- Splash of BBQ sauce
Put it together:
Cook your brown rice as per package directions, gather your toppings, and then channel your inner artist! Half of the fun of this rice bowl is adding all the ingredients and making it pretty! I splashed on a little BBQ sauce after the rice (and before the toppings) to make it easy to blend.
This is SO delicious and absolutely filling. It is a must add to my weekly rotation of meals. I like that you can really add anything to the bowl to mix things up or use whatever leftover veggies you have in your fridge. I am going to try a Mediterranean style rice bowl this week.
